Our little guy has been sick these past two days. It kills me every time his fever goes up because he can verbalise pain:
"Mommy, I feel so so bad."
Thankfully, it is nothing serious, but it is times like these when his reliance on us is so full and when he is so fragile, vulnerable, and in pain that I have to find a great deal of extra strength. I have to decide every minute to be the strong one, to not panic, to grow up a little more. I'm not sure that that makes sense, but when he was first born and during the first illnesses I felt vulnerable with him, helpless, even though I was supposed to provide relief and help. I don't have the power to take his pain away; I may not even have the strength to push through, but I always make sure I find it (with much help from Bryan).
Jack is getting better slowly and as much as we would like to feed him all kinds of deliciousness, all he wants are cuddles and kisses. We are more than happy to oblige.
Needless to say, not much cooking has happened and Jack did get a McDonald's meal yesterday after a few very emotional hours at the hospital being poked and proded. Things are looking better and I'll be cooking soon. In the meanwhile, here is a recipe for a sauce that is a favorite in our family. I made it a few weeks ago to eat with chorizo and chicken tostadas, served with avocado slices, bejeweled with cherry tomatoes, and sprinkled with cotija cheese. It is a perfect match for the heat the chorizo gives, and it is cool and refreshing, perfect for summer. Be well, everyone.
Tomatillo Cream Salsa
3 Tomatillos, roughly chopped
Bunch of cilantro, chopped(about 2/3 cup)
3 garlic cloves, chopped
3 green onion springs, chopped
Juice and zest of 1 lime (if your lime does not have a lot of juice you may add the juice of up to two more limes)
1 ½ cup of Mexican Crema
1 teaspoon extra virgin Olive oil
1/2 teaspoon Salt
Place in a food processor all the ingredients and puree until smooth. Serve with fajita style steak, chicken, or tofu.

Aww, so sorry your little guy is sick :( I'm glad he's getting better and hope he fully recovers soon!
Love this salsa, it's so unique and versatile, not to mention delicious looking!
Poor little man. There's nothing worse than a sick baby. I know exactly the feeling you describe- the helplessness and the scraping up every bit of courage to be the strong one. The refusing to leave him alone for even a second, because maybe he will need you. sigh... I hope it's over soon and you're all back into you're regular routine.
The tomatillo cream sounds wonderful- always looking for a reason to eat more avocados!
Poor kid :(
I've been craving mexican food like CRAZY and if I can get my hands on some of these ingredients, I really want to make some of those tostadas!
Oh my, there is nothing worse than a sick child. When my oldest was 2 months old, we ended up in the ER with a super high fever and had to stay for hours for observation. I was absolutely numb with fear. He turned out fine, but I'm not sure I was! I hope he is feeling better and that you get some rest!
i think that this is the perfect anecdote to illness!
i love the addition of the crema. i often add a half of ripe avocado to my tomatillo salsa to give it a bit of creaminess, but i like the crema too!
oh no, I hope he gets better soon!
On a brighter note, the salsa looks amazing, and I love the way you ate it on tostadas!
We love tomatillos, but we've never tried mexican crema. This does look like an interesting way to make the salsa.
